For the chicken lettuce wraps:
âą 2 Ib skinless/boneless chicken thighs
âą 1/4 cup olive oil
âą 1 tablespoon salt
âą 1 teaspoon pepper
âą 3 oranges
âą 1 lime
âą 1/4 piece of onion
âą 6 pieces of garlic
     1 unseeded jalapeño
âą 1 head of butter lettuce or romaine (for wrapping)
Toppings:(all optional)
âą Diced avocado
âą Shredded cheese (optional for lower fat, use reduced-fat)
âą Chopped cilantro
âą Lime wedges

For the street corn salad:
âą 1 1/2 cups grilled or canned corn
âą 3 tablespoons Greek yogurt or light mayo
âą 1 tablespoon sour cream
âą salt & pepper to taste
âą 1/4 cup crumbled cotija or feta cheese
âą 2 tablespoons chopped cilantro
âą Dash of hot sauce (optional)

Marinade your chicken a day ahead or an hour ahead
In a blender, onion, olive oil, jalapeño, cilantro, garlic, salt, pepper, squeeze oranges and lime juice. Have this marinade.
1. Cook the Chicken:
In a skillet, heat olive oil. Cook until done, make sure it gets browned on both sides, then chop up chicken.
2. Prepare the Street Corn Salad:
In a bowl, mix corn with Greek yogurt/mayo, sour cream, cilantro, and cheese. Add hot sauce if you like a little heat.
3. Assemble Wraps:
Scoop chicken into lettuce leaves, add street corn salad. (avocado, cheese, cilantro, & hot sauce (Optional))
