I came across a recipe that caught my eye — something fresh, flavorful, and full of texture. But as always, I had to make it my own. These chicken lettuce wraps paired with a street corn salad & added hot sauce it turned out better than I imagined.


As I plated everything, I couldn’t help but think, Bri would’ve loved this. We always bonded over good food — especially when it came to bold, Mexican flavors.


Even better? This meal is budget-friendly and great for anyone on a weight loss journey. It’s light, satisfying, and packed with flavor — no rice, no heavy carbs, just wholesome ingredients and good spice. Definitely one for the books.

🛒 Ingredients


For the chicken lettuce wraps:

‱ 2 Ib skinless/boneless chicken thighs

‱ 1/4 cup olive oil

‱ 1 tablespoon salt

‱ 1 teaspoon pepper

‱ 3 oranges

‱ 1 lime

‱ 1/4 piece of onion

‱ 6 pieces of garlic

          1 unseeded jalapeño

‱ 1 head of butter lettuce or romaine (for wrapping)


Toppings:(all optional)

‱ Diced avocado

‱ Shredded cheese (optional for lower fat, use reduced-fat)

‱ Chopped cilantro

‱ Lime wedges

For the street corn salad:

‱ 1 1/2 cups grilled or canned corn

‱ 3 tablespoons Greek yogurt or light mayo

‱ 1 tablespoon sour cream

‱ salt & pepper to taste

‱ 1/4 cup crumbled cotija or feta cheese

‱ 2 tablespoons chopped cilantro

‱ Dash of hot sauce (optional)

Marinade your chicken a day ahead or an hour ahead

In a blender, onion, olive oil, jalapeño, cilantro, garlic, salt, pepper, squeeze oranges and lime juice. Have this marinade.


1. Cook the Chicken:

In a skillet, heat olive oil. Cook until done, make sure it gets browned on both sides, then chop up chicken.


2. Prepare the Street Corn Salad:

In a bowl, mix corn with Greek yogurt/mayo, sour cream, cilantro, and cheese. Add hot sauce if you like a little heat.


3. Assemble Wraps:

Scoop chicken into lettuce leaves, add street corn salad. (avocado, cheese, cilantro, & hot sauce (Optional))
