🥟 Bri’s Favorite Beef Empanadas — With a Spicy Twist of Love

💜 A Bite of Bri’s Joy


These beef empanadas are more than a meal — they’re a memory. I made these with ground beef, veggies, and a wedge of egg tucked inside each one. Bri loved them. She’d always say, “You made it the right way,” then douse hers with her favorite Peruvian hot sauce (picante) and savor every bite.


Cooking these again brings me right back to her laughter in the kitchen and the joy on her face when we shared meals together. I hope this recipe brings warmth to your home the way it did to ours.



🧾 Ingredients


For the filling:

• 1 lb ground beef

• 1 tablespoon olive oil

• 1 small onion, finely diced

• 1/2 cup red bell pepper, diced

• 1 cup mixed vegetables

• 2 garlic cloves, minced

• 2 tsp cumin

• 1 packet Sazon

• Abode to taste

• 2 boiled eggs, cut into wedges

(Optional: chopped olives or raisins)


For the dough:

• 1 packet dough disco

🍳 Instructions


1. Make sure dough disco out not frozen and are out of the fridge for about an hour.


2. Prepare the Filling:

In a skillet, heat olive oil and sauté onions and garlic. Add beef and brown. Stir in peppers, mixed veggies and spices. Simmer until well combined and thickened. Cool the filling.


3. Assemble the Empanadas:

Take out the dough disco and sprinkle flour on board and roll it out so it can be into 5–6 inch circles. Add 2  spoonful of filling and a piece of egg. Fold over and seal with a fork on both sides.


4. Fry:  Get a pan that will fit two empanadas at a time. Put oil in it. Heat pan up. This process will be fast. Two minutes on each side or until they are golden brown.



5. Serve:

Don’t forget the Peruvian picante — Bri wouldn’t!
