Beef stew wasn’t exactly Bri’s favorite dish, but she would still eat it — because, as she liked to say, “There is no other choice.”
In our family, dishes with rich, flavorful gravy are a tradition. Beef stew is one of those comforting classics that shows up on our table in many different styles. Every family member has their own twist, and that’s part of what makes it so special.
One thing we always agree on? Cilantro. We use a lot of it — and no, it doesn’t taste like soap, no matter what people say! That fresh, bright flavor brings the whole dish together.
This version is my style of beef stew. It’s made with love, layered flavors, and a sprinkle of memories — especially of Bri, who would eat it with a shrug but still with a smile, because there was really no other choice.
