There are some dishes that just bring you home. This hash brown casserole is one of those for us. It was one of Briās absolute favorites. She loved how cheesy, creamy, and satisfying it was ā a simple, feel-good kind of meal that always brought smiles to our table.
Whether it was a holiday brunch or just a regular Tuesday when we needed some comfort, this casserole made an appearance. It reminded her of the little joys ā warm kitchens, family gathered around, and moments where time slowed down.
š Why We Love It
Melty cheddar on top
Creamy, golden hash browns underneath
Just the right amount of crisp on the edges
And most of all ā the memories it brings back

2 cups shredded cheddar cheese (plus extra for topping)
1 (10.5 oz) can of cream of chicken soup

1/2 cup melted butter
1 small onion, finely chopped (optional)
