š Braised Short Ribs with Homemade Mashed Potatoes

There are meals⦠and then there are meals that stay with you.
This one? It was one of Briās absolute favorites ā braised short ribs, cooked low and slow just like Julia Child wouldāve done it, and always served with creamy mashed potatoes on the side.
Bri loved the richness, the deep flavor, and the way that first bite would practically melt in her mouth like butter. The moment she tasted it, her eyes would close and sheād say,
āThatās it. Thatās the bite.ā š
š Ingredients (Short Ribs)
3ā4 lbs bone-in beef short ribs
Salt & pepper (to season ribs)
2 tbsp olive oil
1 large onion, chopped
2 carrots, chopped
8 mushrooms, chopped
4 garlic cloves, smashed
2 tbsp tomato paste
2 cups red wine (Cabernet or Merlot work beautifully)
2 cups beef broth
2 sprigs fresh rosemary
2 sprigs fresh thyme
1 bay leaf
š§ Ingredients (Mashed Potatoes)
3 lbs Yukon gold or russet potatoes
½ cup unsalted butter
2 tbsp sour cream
¾ cup heavy cream (or more if needed)
Salt to taste
š„ Instructions
Braised Short Ribs
Preheat oven to 325°F (163°C).
Season ribs generously with salt and pepper.
In a Dutch oven, heat olive oil over medium-high. Sear ribs on all sides until browned. Remove and set aside.
In the same pot, sautĆ© onion, carrots, and celery for about 5 minutes. Add garlic and tomato paste, cook 1ā2 minutes.
Pour in wine, scraping up any bits from the bottom. Simmer 10 minutes.
Add broth, herbs, mushrooms and ribs back to the pot. Liquid should mostly cover the ribs.
Cover and place in the oven for 2.5 to 3 hours, until meat is fall-off-the-bone tender.
Mashed Potatoes
Peel and chop potatoes. Boil in salted water until fork-tender.
Drain, then mash with sour cream, butter, and cream. Season with salt.
Serve as a perfect bed for the short ribs and gravy.
