💜 Papa a la Huancaína – A Taste of Heritage for Bri

Papa a la Huancaína is more than an appetizer — it’s a tribute. This dish connects to Bri’s beautiful, mixed heritage: Peruvian, Italian, Japanese, Jamaican, Chinese, Cherokee Indian. She has family that is from the south as well. Her ancestors were enslaved and survived. She came from resilience, and she carried that strength in every part of her life — and in her deep love for food.

This creamy, spicy, colorful Peruvian potato dish made her smile every time — not just because of its bold flavor, but because it brought her closer to her roots.





🥔 What Is Papa a la Huancaína?



It’s a Peruvian classic. Sliced boiled potatoes, served cold with a rich sauce made from ají amarillo, queso fresco, and evaporated milk. It’s bright, beautiful, and full of flavor. Often served as a starter, but in our house, it could be the main event. Even taking the sauce and adding it pasta or on your rice.





🛒 Ingredients



For the Huancaína Sauce:


  • 3 ají amarillo peppers (or paste), seeded and chopped

  • 1 cup queso fresco (or feta), crumbled

  • ½ cup evaporated milk

  • 4 saltine crackers (or ½ slice white bread)

  • 1 garlic clove, minced

  • 1 Sazon packet

  • Salt to taste



To Serve:


  • 2 lbs Yukon Gold or yellow potatoes, boiled and sliced

  • 2 hard-boiled eggs, sliced

  • Black olives for garnish






👩‍🍳 Instructions



  1. In a blender, combine ají amarillo, queso fresco, evaporated milk, crackers, sazon, garlic, and salt.

  2. Blend until creamy and smooth. Add more milk for thinner texture, if needed.

  3. Arrange potato slices on a platter.

  4. Spoon or pour the sauce generously over the potatoes.

  5. Garnish with egg slices and black olives.

  6. Serve chilled or room temperature.
